Most of the time, spice blends are handed down the generations and protected as secret recipes. This is certainly true for pickling spice recipes!
While you can buy a ready-made mix, finding out what is actually in it is something else again!
All mixes use mustard, coriander and fennel seeds. Some use turmeric, crushed bay leaves and hot pepper flakes. Many use peppercorns.
In my research, I found a list of typical spices and seasonings used in making pickles.
I urge you to try flavors from this list. Add others you like. Write down what you use and how much. Make your pickle and taste your spice blend. Add and subtract until you get the blend you like best for each of your sweet, savory, kosher, vinegar and salt fermented pickles.
You may find you like a different blend in each circumstance.
Start with 1/2 teaspoon of what looks good to you. Mix everything in a jar, label it and make some pickles. Come back here and try another mix next time, until you get it "Just Right!"
