candied jalapenos

Also called Cowboy Candy, this condiment recipe is FABULOUS over cream cheese on a cracker. If you like sweet and hot, you will LOVE this recipe!

the process to make candied jalapenos

Mix vinegar and sugar together with your spices. Slice your jalapenos or other hot peppers, and cook over low heat until the sugar reaches the soft-ball stage. Put in your prepared jars and seal in a water bath.

My recipe produce 3-1/2 pints. If I had another pound of peppers, it might have made 4 full pints.

Recipe Ingredients

  • 4 lbs jalapenos
  • 2 cups apple cider vinegar
  • 6 cups brown sugar
  • 1/2 cup white sugar* optional
  • 3 tablespoons minced garlic
  • 1 teaspoon red pepper flakes
  • 1 tablespoon turmeric

I wore plastic food-safe gloves to handle the peppers

I did not remove the seeds from the peppers, so my results are HOT!

MUY CALIENTE!

If you want a milder result, remove the seeds.

I used a mandolin to get my slices uniform, but your knife skills might be better than mine. I used the medium slice blade insert.

Because I only sliced to a safe distance from the blade, I had a bit of waste. If I'd had my safe-cutting glove on, there would be less waste and more solids in my product.
