For years, Hot Water Bath canning was the way to go for processing pickles for the cupboard.

Recently, I saw a friend use something else.

A Steam Canner!

So what is a steam canner?

A steam canner uses steam instead of water. The energy savings of not having to bring a large volume of water to a boil is obvious. What may not be obvious is that this way of canning takes the same length of time as water-bath canning. 

This process is NOT for low-acid foods, but is perfect for acidic fruit or pickles.

2.5 quarts of water vs. 10qts. 

Less time waiting for water to come up to temperature, with equally good results.
